For Canadians, 'barbecue' and 'grilling' are interchangeable words," he says. "In the U.S., 'barbecue' is a noun. You cook barbecue, you eat barbecue. It's an indigenous form of American cooking where you take big fat, tough cuts of meat and cook them for a long time over a slow, low hardwood or charcoal fire. And that process is magical and it changes the flavour and the texture of the meat. And it's the most delicious food on Earth.
"We decided to go and compete in our first U.S.-based contest, which was 'Let's give it a go and let's see if we can compete with the Americans on their own turf,'" he says. "We went down to Oregon and we competed in the Oregon State Open Barbecue Championship and ended up winning it. We won three of four categories and we became the first Canadian, and ...

Van Elsberg relates how he nearly burnt the forest down while car-camping alongside a logging road near Lichtenstein, Germany. He used gasoline as a suitable substitute for charcoal lighter fluid to start a barbecue, which resulted in an explosion that nearly came close to some tree limbs above. He also offers some barbecuing tips to help one avoid accidents.

[Judith Fertig] and [Karen Adler] tend to stick with simple ingredients in their recipes, but they blend them creatively to give food flavour that packs a punch, like the marinade and the sauce for the pork loin. You'll also find helpful advice on smoking foods, how to use wood chips in the grill and how to "plank" food (cook it on a wooden board that's been soaked in water).
Here are three recipes from Fertig and Adler's BBQ Bash that would make a lovely Mother's Day meal. The Latin-style pork loin tastes great, but if pork isn't your thing, you could use the sauce with chicken just as easily. The antipasto platter is actually an appetizer but can be served as a slightly lighter alternative to good old baked potatoes. The cilantro slaw can be prepared ahead of time, but don't dress it...

Grilling fruit caramelizes the natural sugars, softens the texture of the flesh and releases the delicious juices. The flavours of the fruit become concentrated and the smokiness of outdoor cooking adds an element right at home with the taste of fresh fruit.
For a fun alternative to the summer classic s'mores, cut a two-centimetre (3/4-inch) slit down the length of an unpeeled banana. Pry the slit open and stuff with about 30 ml (2 tbsp) of chopped dark chocolate or your favourite candy bar (Mounds bars work great). Wrap the banana in foil and grill for about five minutes on each side. The banana is done when it feels very soft when squeezed with an oven mitt. Unwrap and serve while the chocolate is warm.

Manjack Cay is a private beach, but only 'private' in that you need a boat to get to it," [Brendal Stevens] says, while preparing our picnic lunch of conch salad -- his own recipe. "I mean, you've got a grill here, benches to sit on and water to swim in. All you need is the charcoal and food and you're set.
Just then a shadowy figure looms in the water. "She's one of my babies," Stevens says, as he prepares a hefty lunch of raw conch for the stingray he has christened Georgette. "I've been feeding her for years so she knows the sound of my boat and swims right over to me."
"It's completely natural," Stacie Mills, director of operations, says. "There are no man-made elements in this beach at all. When we first spotted the property and looked to break ground, the beach's heart shape was...

The easiest fish to grill are the firm varieties that are available in steak form, such as tuna, swordfish and halibut. These fish hold together well and usually can be flipped without falling to pieces. Fish steaks that are 2.5 centimetres (one inch) or more thick stand up best to the grill.
For the oiling, do it just before putting the fish on the grill. The easiest way to do this is to fold a paper towel into a small pad, grip it with tongs and either dip it in a bowl of oil or spray it with cooking spray. Rub the grates with the paper towel thoroughly but quickly to keep it from catching fire.
Tuna is easy to grill and can stand up to an acidic marinade such as this one without a change in texture. For convenience you even can prepare the marinade and coat the fish in the morning to...
