Taste Tester Notes: This classic cake is visually appealing with vibrant colour set against white and rich butter frosting. The cake is not strongly flavoured, so the rich frosting complements it. Some versions use only 30 ml (2 tbsp) of red food colouring, which is all I used, and the colour is still bright. I found this made just enough frosting for a two-layer cake, so if you like thick frosting you may want to make more (1 1/2 to 2 times the recipe). You can also bake 2 layers and cut each in half horizontally before icing to create 4 layers. (Make a double batch of frosting in this case -- if there is any leftover frosting, you can always freeze it for another time.) I would not substitute for real butter in the frosting. Grant Frederick had asked if anyone had a clone recipe for Salisbury House chili. Ruth Thomas wrote that she attended a Huron Carole Festival at The Forks in the late 1980s, where Salisbury House was serving chili and handing out the recipe, and she kindly sent me a copy. Thanks also to Florence Bouchard, who had a copy of the same recipe as published in the Free Press a number of years ago. The recipe contains a number of spices and other ingredients with metric weights, and for those without a kitchen scale I have included approximate common imperial equivalents.

Sift together flour, sugar, baking soda, salt and baking powder. Mix together with remaining cake ingredients, except Snickers bars, in a large bowl. Mix for 30 seconds on low speed and then 3 minutes on high speed. The batter will be creamy. Stir in Snickers bars. Grease and flour 2 (8-inch) round cake pans. Pour batter in pans. Bake at 350 F for 35 to 40 minutes.

Barb Davenport is a former Winnipegger now living in Calgary and would like the recipe for the spicy and moist Spanish bar that was sold at Safeway in two-layer slabs with a creamy frosting.
