You kind of get the sense when you talk to people who have had Irish food that there is a lot of fat floating around," says home economist and cookbook author Emily Richards, who has been a groundbreaker in renovating high-fat and -calorie recipes so that the centuries-old tradition isn't lost but the heft is.

Taste Tester Notes: Colourful and very tasty, with a nice texture. I seeded my cucumbers before grinding. Using a wire whisk to stir in the flour will keep it from lumping, and help make the sauce smooth. Current canning procedures recommend leaving a 1/2-inch head space, and processing 500 ml (pint) jars for 15 minutes and 250 ml (half-pint) jars for 10 minutes in a boiling water bath. This is also very good mixed with mayonnaise for tuna salad sandwiches.
Chop vegetables fairly fine and sprinkle with coarse salt. Let stand overnight; drain but don't rinse. Bring vegetables to a boil with 250 ml (1 cup) of the vinegar from the sauce ingredients. Make sauce and add to vegetables and cook 10 minutes. Place into sterilized jars.
