This recipe suggests butter or margarine, but butter is better. Martha Stewart's website suggests rolling homemade truffles in different brands of cocoa (each is a slightly different colour). This is a nice suggestion, but only if you can buy small amounts in bulk. They also suggest dusting your hands in cocoa before rolling the truffles so they don't stick to your hands.
This tastes great, and with the whole wheat tortillas, fresh fruit and low-fat yogurt, it's a very healthy dessert. If you are serving these to someone who is controlling their blood sugar, you could exchange the sugar for a sugar substitute and even serve plain, unsweetened yogurt.
