A good number of people are passionate about good food, and Bartley Kives is evidently one of them. However, a couple of points he made in Saturday's column (Heart and soil) made no sense whatsoever. First, he stated that small cheese factories using unpasteurized milk must be cleaner and safer than mass-production facilities. How so? Surely, it only takes one breach in protocols to compromise food safety in either facility. Second, Kives accused the food science professor of ignorance because he expressed concern about the dangers of food-borne disease in unpasteurized dairy products. Surely, the professor's motive was to oppose ignorance. By writing, he has attempted to make Kives aware of the risks associated with consumption of artisanal cheeses.
