A few weeks back, while making Stewart's Roasted Zucchini and Tomatoes with Fusili (go to her website), it seemed like a good idea to start with the same method of tossing the vegetables in olive oil with beef chunks added, roast them for 20 minutes or so and then pop it all into the crockpot with some beef broth.
