"It's very surreal," said Lisa Einfeld of the fire, admitting to being "a little bit stressed" at the thought of doubling the workload at her Regent Avenue location.

A four-unit apartment building beside the bakery was evacuated early as a precaution. One resident, Hilda Mann, stood outside clutching her cat Skittles in her arms, the jittery feline wrapped in a blanket. Mann said she was "kind of shaken up" by the incident, and hadn't realized anything was wrong until she heard the sounds of a fire truck approaching.

"We're definitely going to rebuild," he said. "It's just going to be awhile."
