Summary


My son has just turned five and is fascinated with the solar system. My challenge was to create a moon cake -- Rhea, one of Saturn's many moons. Luckily for me, Rhea is icy and heavily cratered. I used a three-layer chocolate cake recipe and baked it in a large metal bowl, and then baked another single layer cake in a round pan. I trimmed some of the large cake and then inverted it on to the round cake to give me a dome shape to work with. I cut the large cake horizontally into two and then put a cream filling between all three of the layers. I iced the whole cake with white butter cream frosting, and used a finger tip to swirl in the craters. Other moons were made of paper and suspended on thin wires inserted into the cake, along with an astronaut cutout with my son's face (made using Photoshop). The whole thing looked very space-like, much to the delight of my little astronaut.

Make meatballs from ground beef, onion, bread crumbs, garlic salt, rosemary, parsley, pepper and 60 ml (1/4 cup) of the beef broth. Shape into balls and roll in flour; sauté in oil until brown. Remove to large bowl. Blend in remaining flour, stirring constantly until mixture browns. Stir in remaining beef broth and tomatoes, breaking them with spoon. Cook until thickened. Add meatballs and simmer 10 minutes.

Taste Tester Notes: This basic meatballs and sauce over mashed potatoes is easy comfort food. I used 450 g (1 lb) of beef and 80 ml (1/3 cup) chopped onion. Using a wire whisk to stir the beef broth and tomatoes into the browned flour will help keep the sauce smooth. I used a 398 ml (14 oz) can of diced tomatoes and about 500 ml (2 cups) of frozen vegetables.
