Summary


Cave Spring is a great Ontario producer, and this effort doesn't disappoint. The nose brings aromas of lemon, perfume, honey, and a light waxy note. A light-bodied white, there's good acidity to balance the sweetness of this wine (it's off-dry) reflected in the balance of lemon and honey flavours. This wine would hold its own against artichokes or asparagus, and would do well with not-too-sweet desserts -- oatmeal cookies, biscotti or gelati.

Take artichokes, for example. Artichokes typically make wine taste awful -- an active component in the vegetable called cynarin makes wine taste sweeter than it actually is. A wine that has a bit of sweetness will be slightly buffered from the effect of the cynarin. Something like Riesling, Gewürztraminer or Austria's Gruner Veltliner are all good bets. The other option is to make sure the artichoke isn't served on its own -- the sauce and/or other ingredients can go a long way in masking the flavour of artichokes.
